TOAD: Dec 19th, 2007: Every year Karen’s family celebrates Scandinavian Christmas and I am surrounded by all things grey and fishy. Last year I decided that I would stop complaining and step it up by making something Scandinavianof my own that I could get excited about.
I ended up making something called Medisterkaker, which loosely translates to a Pork Meatball (here’s the recipe if you’re interested). They actually turned out great with one small problem – for some bizarre reason I doubled all the ingredients that were intended to be used with 2 1/4 pounds of meat when all I had was 2 pounds (read: twice the seasoning for less meat). Anyway, they were a little salty but apparently good enough as all you could hear at the table was “medisterkaker this” and “medisterkaker that” so I thing they’ll be back for a second tour next year.
